Jungle Bird
Tiki gets bitter
Campari and rum shouldn't work with pineapple. They do. The bitterness and tropical sweetness create a tension that keeps you going back.
Ingredients
- 1 1/2 oz Dark Rum
- 3/4 oz Campari
- 1 1/2 oz Pineapple Juice
- 1/2 oz Fresh Lime Juice
- 1/2 oz Simple Syrup
Method
Combine all ingredients in a shaker with ice. Shake well. Strain into a rocks glass over ice. Garnish with pineapple.
Created by Jeffrey Ong at the Kuala Lumpur Hilton (July 6, 1973) as the hotel's opening welcome drink. Documented in John J. Notes: Giuseppe González's 2010 formula (blackstrap rum, reduced pineapple) became canonical in craft bars.
