Pour crème de cassis into a champagne flute. Top with cold champagne. Stir gently.

Sparkling variant of the Kir apéritif, originating circa 1904 at Café George, Dijon, where waiter Faivre first mixed white wine with crème de cassis. The drink bears the name of Canon Félix Kir (1876–1968), Mayor of Dijon, who popularized it at civic functions. Champagne replaces the original white wine in this "Royal" rendition.
